What is Flattened Rice?

Commonly known as ‘Pohe’ (Plural) or ‘Poha’ (Singular), it is rice that is flattened and then dried to make flakes. These rice flakes swell and soften when mixed in liquid (either milk or water) or when rinsed under water. Each flake is thin, tiny, pale white and translucent. They are extremely light in weight and even a bagful of flattened rice might weigh ‘almost’ as light as a feather. Their texture is rough, with uneven edges, and their thickness depends on the amount of pressure that was used to flatten the rice grains. The thinner the flakes, the more expensive they are. Taste-wise, they are bland and don’t give off any aromas or fragrance, hence they have to be flavored with spices and/or seasoning. Flattened rice is very easily digested and is used to prepare snacks and light food.
